  • 1 1/4 cup flour, all-purpose
  • 1/8 cup sugar
  • 3 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon flaxseed, ground
  • 1 teaspoon cinnamon
  • 1/4 cup applesauce, unsweetened
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 none cooking spray
  • 4 teaspoon butter, unsalted
  • 1/4 cup maple syrup, pure
  • 4 medium apple


  • Mix dry ingredients together in a large mixing bowl. In a separate bowl, mix together applesauce, milk, and vanilla; add to the dry ingredients and stir just until well blended. (More milk may be added if thinner pancakes are desired.)
  • Spray a skillet with cooking spray and heat over medium. Once hot, add 1/4 cup batter for each pancake. Cook for 2-3 minutes until bubbly; flip and continue to cook for 1 minute more until cooked through. Continue until all batter has been used.
  • Top pancakes with butter and maple syrup, and serve with sliced apples on the side.
