We love pancakes as a way to eat fruit! On top or in the batter it doesn’t matter to us. This Banana Pancake Stacks recipe has both!
Monday, my son turns 16. His favorite breakfast is pancakes, so we generally make him some for his birthday. When I first started blogging, the poor kid had to pose for me while he ate anything I made so I could post it on the blog. But, since he’s all grown up, he doesn’t carry that same impact for this blog as he once did.
A 16 year old growing boy who basically eats anything is hardly motivation for a parent with a 3 year old picky eater. That’s why I have to recruit neighbor kids these days if I want children in these pictures. (ha ha.. see below). But, for a quick flash back from today and in honor of Nate’s birthday (who I used to call cereal boy on the blog, cause he ate a lot of cereal). Here he is at the beginning of the blog and today. (I have a lot of pictures of my kids eating!)
So, this is our banana pancakes! And to make them fun, with a birthday flair, stack them with cream and fruit! Whatever is in season.
Banana Pancake Stacks
- 1/2 cup oats, dry
- 3 medium banana
- 1/2 cup milk
- 1/2 teaspoon vanilla extract
- 3/4 cup oats, dry
- 1/2 cup flour, whole wheat
- 1/4 teaspoon salt
- 2 teaspoon baking powder
- 2 large egg white
- 1 none cooking spray
- 1/2 cup strawberries
- 1/2 cup kiwi
- 1/2 cup blueberries
- To make ground oats, place 1/2 cup of regular oats in a blender until it becomes flour.
- Blend bananas and milk together in blender. Transfer to bowl and stir in vanilla, ground oats, oats, flour, baking powder and salt.
- Beat eggs until stiff peaks. Fold in egg whites. Spray nonstick griddle with cooking spray and heat over medium heat.
- Add in a few spoonfuls of batter, leaving room for when they expand. Cook on each side until lightly browned.
- To make them fun, stack with cream and fruit! Whatever is in season.
