We’re continuing breakfast week with a twist on fruit filled crepes for your kids! We love crepes because they are the perfect vehicle for fruit! Our goal at Super Healthy Kids is to make fruits and vegetables simple, fun, and delicious, and this apple filled crepe sushi breakfast does just that!
First, my kids chose the fruit. And considering it’s the middle of winter here, the only fruit we can really count on getting is apples. But we love apples anyway, so it was all good. Apples are a great food to add to your families diet! They’ve been shown to
- Regulate blood sugar (none of those super high’s, followed by super low’s)
- Be a great source of fiber
- decrease asthma symptoms! (Source)
- Be high in Vitamin C (oranges get all the credit, but apples are also a good source)
- Taste delicious! Really, if there is any fruit that most kids will eat, it’s apples. They taste great!
So, first we chopped 2 apples, placed them in a microwave safe dish with a little cinnamon and 1/4 cup of water. We cooked them in the microwave for about 5-6 minutes.
Then, we chopped the apples up in a food processor just pulsed for a minute! I wanted the apples to stay a uniform size, still be chunky, yet not be applesauce.
Then, we mixed up some whole wheat crepes! Knowing we were rolling the crepes and cutting them into sushi pieces, I didn’t worry about making them uniform in size, or even round! And they turned out all sorts of shapes!
Then, placing the filling in a single layer on one crepe, we rolled them up.
Then with each rolled up crepe, we cut them into 1 inch pieces.
- 2 medium apple
- 1/2 teaspoon cinnamon
- 1/4 cup water
- Put all ingredients in blender and mix well. Let stand for 10 minutes and then blend again.
- Spray a small saute pan with cooking spray.
- Angle pan and pour enough batter on one side to thinly and evenly cover the pan. Very quickly swirl the batter around to cover the pan in one thin layer.
- Once the crepe is golden brown on one side, carefully flip it over without tearing the crepe.
- Cook for another minute on the other side until it is golden.
And there you have it! We loved making these and hope your kids like them too! The crepes were so much easier to roll up than tortilla’s or other things we’ve tried to make “sushi” out of. They were soft and pliable enough that it didn’t break when we rolled it! We may have to experiment with lot’s of different fillings for this one.
