Ingredients

  • 8 slice bread, whole wheat
  • 1 medium bell pepper, red
  • 1 medium bell pepper, yellow
  • 4 ounce cheddar cheese
  • 1 medium cucumber
  • 1/4 cup CABBAGE, RED

Serve With

  • 1 cup hummus
  • 2 medium carrot
  • 1 cup pineapple
  • 1 cup sugar snap peas
  • 2 medium banana

Instructions

  • Cut crust from bread and quarter each slice.
  • Cut peppers into large pieces, approximately the same size as the bread. Repeat with the cheese, cucumber, and cabbage. Set everything aside separately.
  • Spread each mini bread square with hummus and layer the vegetables and cheese into a colorful stack.
  • Cut carrots into sticks and pineapple into chunks. Add equal portions to each serving dish or lunchbox, along with sandwich quarters, sugar snap peas, and half a banana.
