Open Toasted Sandwich

  • 1 medium cucumber
  • 1 medium tomato, red
  • 1/4 cup, chopped onion
  • 2 tablespoon olive oil
  • 1 teaspoon oregano, dried
  • 1/2 tablespoon basil, fresh
  • 1 teaspoon parsley, dried
  • 1/8 teaspoon salt
  • 1/2 teaspoon black pepper, ground
  • 1 medium lemon
  • 4 ounce feta cheese crumbles
  • 8 slice bread, rye
  • 4 slice turkey breast, deli style

Serve With

  • 2 medium orange
  • 2 cup shredded lettuce, red leaf
  • 1 tablespoon parsley, fresh


  • Wash and chop all veggies. Place all in medium bowl. In a separate bowl, mix oil, oregano, basil, parsley, salt and pepper, and whisk together. Squeeze 1/2 of the lemons juice into mixture and whisk again.  Gently toss dressing and feta cheese into veggie mixture. Set aside.
  • Toast bread slices 1-2 at a time. Once toasted place slice of turkey on bread, then top with approximately 1/4 cup mixture onto each slice, serve open faced, 2 slices per serving. Serve orange wedges atop salad greens and fresh parsley. Use personal choice of dressing.
