  • 4 tablespoon hummus
  • 8 slice bread, whole wheat
  • 4 slice (1 oz) provolone cheese
  • 1 cup, chopped kale
  • 1 cup alfalfa sprouts
  • 1 medium cucumber
  • 4 medium clementines
  • 1 cup cherry tomatoes


  • Simplicity steals the show here! Spread hummus on one half of sandwich, layer with a slice of cheese and chopped kale (go lightly if the taste of kale is too bold), alfalfa sprouts, and cucumber slices. Add the second slice of bread. This nutrient-packed sandwich may need to be held together with a toothpick! Serve with a sweet clementine and cherry tomatoes.
