Crockpot Sweet Orange BBQ

  • 4 breast chicken breast
  • 1 cup (8 fl oz) barbecue sauce
  • 1 cup Marmalade, orange
  • 1 tablespoon olive oil
  • 2 tbsp chopped shallot
  • 3 beet (2″ dia) beet
  • 1 cup couscous, dry
  • 1 cup water
  • 1/4 tsp salt
  • 1 cup spinach
  • 2 fruit (2-5/8″ dia) orange


  • Toss ingredients into a crockpot; cook on high for 3 hours, or until chicken is no longer pink.  
  • Heat oil in a large skillet over medium heat. Chop shallots, slice beets, add both to skillet. Cook for 5-6 minutes, then add the dry couscous. Toss together for 1 minute; add water and salt; bring to boil then reduce heat to simmer for 10 minutes.  Remove from heat; stir in spinach.
