My daughter (almost 14) has become quite the baker! In fact, almost every Sunday, she’s trying a new cookie recipe.  Although, most of the cookies she chooses to bake I would not classify as “healthy”, there are occassion when we swap out ingredients together, or cut back on the sugar to make them just a bit healthier.

That is what we’ve done with this cookie bar.  First, we made the change from butter to a mixture of coconut oil and applesauce.  We cut the fat by 1/2, and the fat we used was from coconut oil. Definitely a positive move.

Second, we cut our sugar by over 50%, and decided to try some Organic Turbinado Raw sugar.   While I’m not convinced it’s any better for you than regular sugar, it did have a nice molasses aroma to it, which was perfect for this Cinnamon Apple Bar Recipe.

We also added some dried apples that we made this week.  My mom dropped off an entire box of apples that we used to make our favorite, “Dried apple pie”.

Apples are a great food to include in your families diet! They are high in fiber and phytonutrients!  Apples are also well accepted by most kids, and can take on different flavors and textures depending on how you prepare them. Raw, dried, mashed, cooked, juiced, covered in peanut butter, etc!

Ingredients

  • 1/2 cup sugar, turbinado
  • 1/4 cup coconut oil
  • 1/2 cup applesauce, unsweetened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup flour, whole wheat
  • 3 cup oats, dry
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup apples, dried

Instructions

  • Whisk together turbinado sugar with melted coconut oil.  Add the applesauce, egg and vanilla.
  • Fold in the dry ingredients.
  • Chop dried apples and add to batter.
  • Preheat oven to 350 degrees F.  Pour into a greased 8 X 8 inch pan.  Bake for 30 minutes, or until knife comes out clean.
  • Allow to cool, and cut into bars.

The final recipe was this:

I would eliminate those sugars completely and use a combination of Maple Sugar, Stevia, raw honey, real maple syrup or agave for a real and natural alternative. Also, to make them gluten-free, I would substitute the flour for almond or coconut flour. With those small tweaks in mind, I know my 14-year old, cookie-baking addict will love to try these!!

Just to clarify, this is plain flour? Don’t need a rising agent?

Hi, I am from the Dominican Republic and I just got a stove with an oven, so I just started baking. I made this recipe with the ingredients I had at home, instead of apple, pear, instead of dried apples, raisins and it was very good. My children loved it, and so did I. Thank you so much for all these wonderful recipes. I am getting ready for the black beans brownies. 😉

Have you ever tried coconut sugar? It’s actually healthy for you and when mixed with other ingredients it’s taste is amazing. Also I would use oat flour (Bobs RedMill Oats pulsed in blender/food processor etc). That’s just my opinion. Also for the apples, if someone didn’t want to dry them first, they could try tossing them with brown sugar, cinnamon and smart balance (accidentally vegan butter alternative), put them in three oven at 425 for about 15 minutes. It’s my base for Apple crisp. Never soggy, always moist.
