Quinoa Mango Avocado Chicken Salad with Coconut Lime Dressing is some summertime heaven on a plate, depending on your avocados being perfect. Isn’t that the most irritating thing? You buy some avocados, you wait patiently for them to ripen and then once you get the guts to slice one open, you are 0.5 seconds too late and it’s already gone bad. Salad Can Be Super Versatile
This salad is definitely something you can mess around with. If quinoa isn’t your jam, try brown rice. Even some millet would be lovely with this. If your crew doesn’t like cilantro, first punish them all and take away their video games, and then maybe try a handful of chopped fresh chives. Is there half a head of romaine lettuce sitting in your fridge from last night’s dinner? Throw that in! Feeling fancy? Replace the chicken with some grilled shrimp. Or get rid of the protein all together. But wait, maybe add black beans? I could go on forever.

Quinoa in a Salad?
Quinoa Mango Avocado Chicken Salad with Coconut Lime Dressing
Ingredients
Dressing
- 1 cup coconut milk
- 3 tablespoon lime juice
- 2 tablespoon vinegar, rice wine
- 2 tablespoon sugar
- 1 medium lime
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne or red pepper
Instructions
- Zest and juice lime.
- In a medium bowl, combine all dressing ingredients and whisk to combine. Set aside.
- Cook quinoa according to directions on package. Shred chicken. Chop cabbage; dice and peel mango and avocado; chop cilantro.
- In a large bowl, combine all salad ingredients and toss. Drizzle dressing over the top. Dressing is thin, so be careful to not add too much.

Awesome recipe! I left out the chicken for a vegetarian dish but no other changes … had a wonderful flavor, easy to make and really filling! Will make again!
