Quinoa Mango Avocado Chicken Salad with Coconut Lime Dressing

Restaurant quality salad made at home for a complete meal in just one bowl of this amazing Quinoa Mango Avocado Chicken Salad

Are you looking for the perfect summer salad that will entice your kids into eating whole grains and some fruit and veg? Well look no further. Quinoa Mango Avocado Chicken Salad with Coconut Lime Dressing is some summertime heaven on a plate, depending on your avocados being perfect. Isn’t that the most irritating thing? You buy some avocados, you wait patiently for them to ripen and then once you get the guts to slice one open, you are 0.5 seconds too late and it’s already gone bad. Like I see all these perfect avocado roses on toast all over social media and I am screaming, “What voodoo are you doing to get those to be perfect avocados?!”

Salad Can Be Super Versatile

This salad is definitely something you can mess around with. If quinoa isn’t your jam, try brown rice. Even some millet would be lovely with this. If your crew doesn’t like cilantro, first punish them all and take away their video games, and then maybe try a handful of chopped fresh chives. Is there half a head of romaine lettuce sitting in your fridge from last night’s dinner? Throw that in! Feeling fancy? Replace the chicken with some grilled shrimp. Or get rid of the protein all together. But wait, maybe add black beans? I could go on forever.

Fresh, Fresh, Fresh!!!

Yep.  If you haven’t tried mixing grains in with greens in a salad before – this is your big chance!  They pair so well together – freshness from the greens + filling from the grains.  Plus we all know that kids comfort food is grains!  This salad is super yummy with quinoa AND brown rice.  Try them both for some serious whole grain goodness.   You can also try red quinoa for a beautiful color.  If you can’t find red quinoa in stores, you can always order it from Amazon.    Top this salad off with our creamy Coconut Lime Dressing for the complete experience.  We hope you enjoy this salad as much as we do!

Awesome recipe! I left out the chicken for a vegetarian dish but no other changes … had a wonderful flavor, easy to make and really filling! Will make again!

Didn’t work for my family. Ingredients are very healthy but dressing ended up too sweet. Even my kids refused to eat it?
