Mom, can we have tacos for dinner? I hear that question more than once a week. Mexican food  is a staple in our home and as my children would say, we could eat it “like literally” every day.  However, tacos get a little boring after a while which is why I started creating family style dishes. Subbing meat for veggies in our favorite Mexican dishes provides a healthy twist to the usual meat and cheese.

My friends will say that I am always creating Mexican dishes and dining at Mexican restos with them because the food is the BEST! Inevitably, we will talk about our favorite dishes like Carne’ Asada, Chicken Enchiladas and children almost always say queso. Those are all great and I love hearing all of the mouth watering choices. Then, it comes to me and I agree that just about every Mexican dish is amazing and  begin to think of the ways how I can make all of the very same dishes and pack them with vegetables.

Turn this Taco Bowl filled with roasted sweet potatoes, brown rice and corn cooked in the rice cooker, fresh tomatoes, romaine lettuce, red onion and lime wedges with avocado lime dressing into an even bigger crowd pleaser by serving with warm corn tortillas. This dish will get your kids to eat veggies and become a staple on your monthly dinner menu.

The great thing about making a dish like this, is that there is something for everyone!  A lot of times one of my kids will like something and another won’t.  This gives your kids the option of trying everything, but also being able to select what they want on their plate.  There are familiar ingredients and maybe some that aren’t so familiar.

Taco Bowl with Avocado Lime Dressing

Instructions

  • Preheat oven to 400°F. Set the corn out to thaw.
  • Thoroughly wash the potatoes and cut them into 1 inch cubes. Shred or chop lettuce.
  • Arrange potatoes on a baking sheet lined with parchment paper; sprinkle with sea salt and black pepper. Bake for 25-30 minutes, turning once half way through.
  • While potatoes are cooking, cook rice according to package instructions.
  • Fluff rice with a fork and fold in corn. Halve tomatoes, chop onion and avocado, and slice lime into wedges.
  • Spoon the rice mix into 1/4 of a large serving bowl or platter, then add remaining ingredients as pictured.
  • Add all dressing ingredients to a blender and blend until mixture is well combined and thin; add more water if needed. Drizzle over salad.
  • Serve immediately.

Yummy and pretty easy, but it will take longer than the suggested time if you cook the rice from scratch. Also, I would add more corn and I added black beans to the rice bump up the protein.

Wife and kids loved it. Something different from our normal menu and very flavorful. Great meal for a hot summer day.

I actually used chicken instead of sweet potato because I was trying to use up a bunch of leftovers. It was really good, and I’ll use/add sweet potatoes next time. The dressing was super yummy (I had to double it to get it to blend in my blender, and I’m definitely not mad about it) I love versatile recipes like this!

I was a little apprehensive about this recipe but it was actually really good!! Even my hubby really liked it and wants it again!

Ugh I totally reviewed the wrong recipe about how good this was! Nooby mistake! But anyways, this was so good! Mine didn’t nearly look at good and I used spiralized sweet potato and black olives as well with some pumpkin seeds too for crunch but my bf even got seconds! Yum!

Excellent dish! Made this as a twist on taco Tuesday and, although we are not a Vegan family, this was a hit with all of us! I would recommend adding the line to the dressing to taste as it was potent. Luckily I had extra avocados on hand. Would recommend!!
