- 1 pound chicken breast
- 1 1/2 tablespoon taco seasoning
- 1 1/2 tablespoon olive oil
- 2 medium onion
- 2 medium bell pepper, red
- 8 medium tortillas, corn
- 1/8 cup cilantro
Cut chicken into strips. In a medium bowl, toss chicken with taco seasoning and 1 tablespoon oil.
Slice onions into 1/2 inch-thick slices and cut peppers into strips; brush both with remaining oil.
Heat a grill pan or skillet over medium-high; place chicken, onions, and peppers in hot pan. Cook 10-12 minutes until veggies are tender and chicken is cooked through, stirring occasionally.
Meanwhile, heat a second skillet over medium and heat each tortilla until lightly browned; wrap in foil to keep warm until ready to serve.
Add chicken and veggies to each tortilla and top with fresh cilantro. Serve with kiwi on the side.
