  • 1 none cooking spray
  • 1/2 cup peaches, canned in own juice
  • 1 cup flour, whole wheat
  • 1/4 cup flour, all-purpose
  • 1/2 cup oats, dry
  • 1/2 teaspoon baking soda
  • 1 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/4 cup milk
  • 1 1/2 teaspoon vanilla extract
  • 1/4 cup honey
  • 1/2 cup olive oil
  • 1 large egg


  • Preheat oven to 400°F. Spray a muffin tin with cooking spray (or line with paper liners) and set aside.
  • Dice peaches (approximately 1/2 cup), reserving the liquid.
  • In a large mixing bowl, whisk together flours, oats, baking soda, baking powder, salt, and nutmeg.
  • In a separate bowl combine 1/3 cup peach juice, milk, vanilla, honey, oil and egg.
  • Add wet ingredients to the dry ingredients, stirring only until moistened. Fold in peaches.
  • Spoon batter into muffin tins, filling each 2/3 full.
  • Bake for approximately 15 minutes until cooked through and golden brown; cool on a wire rack before serving.
