Preheat oven to 400°F. Spray a muffin tin with cooking spray (or line with paper liners) and set aside.
Dice peaches (approximately 1/2 cup), reserving the liquid.
In a large mixing bowl, whisk together flours, oats, baking soda, baking powder, salt, and nutmeg.
In a separate bowl combine 1/3 cup peach juice, milk, vanilla, honey, oil and egg.
Add wet ingredients to the dry ingredients, stirring only until moistened. Fold in peaches.
Spoon batter into muffin tins, filling each 2/3 full.
Bake for approximately 15 minutes until cooked through and golden brown; cool on a wire rack before serving.
