Make fast french toast that is packed full of healthy nutrients!
Nuts are a great food to include in your children’s diet! We buy lot’s of nuts around here and eat them almost daily. Nuts are:
- Full of fiber
- A great source of Vitamin E
- Packed with healthy fats that are vital for growing children.
Once in a while, when our nut supplies are low, we have a random mix of chopped nuts that aren’t really enough to cook with or eat whole. We blend all our nuts together in order to use it for crusts or breading on chicken or even french toast!
First, just pour all your leftover nut crumbs in a food processor and pulse until almost powder, but not quite!
Then, use your nut crumbs to coat your french toast before cooking.

We love to experiment with different toppings for French toast. Fruit is by far our favorite, with sometimes a dollup of yogurt.
I sort of think these look like chicken strips!

Nut Crusted Fast French Toast
- 1 cup of ground nuts any variety
- 4 eggs
- 2 tablespoon milk
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 6 slices whole wheat bread
- Grind nuts in a food processor or blender until you have 1 cup of ground nuts.
- In a separate bowl, mix eggs, milk, vanilla and cinnamon.
- If choosing french toast sticks, slice bread into strips.
- Dip bread in egg mix, then in nut mix.
- Cook on hot griddle on both sides until egg is set.
- If you want crispier french toast, add 1 TBL of butter to the pan. For healthier, but softer french toast, just use cooking spray.
