Add spinach, buttermilk, egg, oil and honey to a blender, and blend until smooth.
In a medium bowl, mix the flour, baking powder, baking soda and salt. Add buttermilk mixture and stir until just combined. Do not over-mix; a few lumps should remain.
Heat 1 tablespoon of coconut oil on a large skillet or griddle over medium. Pour batter by the tablespoon, and cook for 2 minutes or until bubbles appear. Flip and cook for 1-2 minutes longer; both sides should be slightly brown.
Top with butter and maple syrup; serve with grapes – green if you have them!
