I wanted to make some sort of green treat for St. Patrick’s Day. I had 3 ripe avocados sitting on my counter……..hmmmm………..what about avocado ice cream? So I went for it. I will warn you now – it was not my favorite. But if you are a die hard avocado fan, you will probably like it.
- 1 can coconut milk
- 2 Tbsp lemon juice
- 2 ripe avocados
- 1 can sweetened condensed milk
- Handful of shaved coconut (you could also use shredded)
- 1/3 cup sugar
Blend together until smooth and creamy – you could also use a food processor. Then pour into your ice cream maker. I have a Cuisinart – so great. It only takes 25 minutes – and no ice involved!

3 of my favorite neighborhood teenagers happened to stop by when the ice cream was in the making. They ‘willingly’ sampled because I told them I would put their pictures on the blog and they would be totally famous.
They were actually really cute about it – one of them said ‘Do I have to finish it?’ Ha ha!!
Here it is in all its green glory. I will say the texture was amazing. It was as smooth as frozen custard…….mmmm……..the flavor was just interesting.
But if you are feeling a little adventurous this St. Patrick’s Day – by all means try this Avocado Coconut Green Dream Ice cream!
