If you’re like me, then you’re always on the lookout for healthy, quick ways to eat your favorite whole foods. I am so excited for everything that comes with fall weather- crunchy leaves, apple orchards, scarves…and CASSEROLES! We all know that with all of the wonderful things that fall brings, schedules also get pretty busy, which is why casseroles save my life during this time of year.
Throw your favorite whole grain, veggies, and lean protein in a casserole dish, pop it in the oven, and have an easy dinner that will most likely result in leftovers for the week.
I am all about eating whole grains that are good for your body, veggies that are in season and delicious, and why not throw some cheese and bacon in the mix, (in moderation of course).
