Easter Eggs 11 Ways!

Hard boiled eggs alone are a perfect snack in my opinion. Many days when my kids walk in the door from school, they will have one for a snack.  I couldn’t be more thrilled.  Eggs have:

  • All 9 essential amino acids!
  • They contain natural occurring vitamin D
  • They promote healthy nails and hair
  • The combination of protein and fat make them a satisfying and filling snack.

Even though we eat them pretty quickly, the amount we hard boil for dying eggs usually exceed our normal consumptions.  So here are a few extra things you can do with your hard boiled eggs:

  1. Egg Salad Sandwich! This doesn’t have to be un-healthy.  Our recipe is:
    • 3 hard boiled eggs, chopped
    • 2 TBL. finely chopped celery
    • 1 TBL finely chopped olives  (optional)
    • 1 tsp. relish
    • 2 TBL. Plain Greek Yogurt
    • Salt!
    • Mix altogether and add to whole wheat bread. egg salad sandwichegg salad sandwich2
  2. Deviled Eggs (really… they are devils!)
  3. Potato Salad
  4. Topping for Green Salads
  5. Make a sailboat
  6. Play the egg drop game.  My kids actually do this at school.
  7. Make English Muffin Pizzas.  These look good.
  8. Freeze for later.  This article says (I have never personally tried it), that you can chop hard cooked eggs and store in the freezer until you are ready to top your salads.
  9. Make breakfast burritos, except use your hard boiled eggs. Simply slice eggs. Add eggs, salsa, and small amount of cheese to a whole wheat tortilla.
  10. Plain egg sandwich.  I craved this every morning during my pregnancies. I had 2 slices whole wheat toast with sliced hard boiled eggs in the middle.  That is all, plain and delicious!
  11. Go beyond the colored egg, and decorate with other things.  This list from family fun includes a bumble bee, bluebird, and Dyeving Dudes!

Can you think of anything else you like to use hard boiled eggs for?

Also, I don’t know if it’s all in my head or not, but I seem to get a cleaner peel when I start at the fat end of the egg, rather than in the middle.. It works for me!

Yesterday I mixed up chopped hard boiled eggs with a bit of teriyaki sauce, dijon mustard and a little lemon juice, garlic, and paprika, then cooked it in a pan just to warm it up and put it over brown rice. It was really good! Kind of like hot egg salad on rice.

I love any kind of eggs, EXCEPT hard boiled. My daughter and husband like them though 🙂 It’s funny you ask about dying eggs-my kids are 8 and 9 and they haven’t asked about dying eggs yet this year, but my guess is they’ll want to dye them the night before. I say that you’re never to old to dye eggs!

Great ideas!

I’ve been making an open face sandwich by putting raw spinach & a smashed up hard boiled egg on half of an english muffin for breakfast this week. I’m officially addicted! And my kids are now trying to steal my breakfast after they tasted it.

Greek Yogurt instead of mayo? (I actually use lite miracle whip). But yogurt would be so much more healthy. Does it really taste good?
(Your reputation is on the line here Amy.) 🙂

Just, noticed this, nothing against eggs, but there are 20 essential amino acids, the most complete form of protein which contains all 20 being most commonly red meat and buckwheat.

Hi Sara!
Only 9 of the 20 amino acids are considered essential, meaning we must get them from food, and our bodies can make them.
