- 4 large egg
- 1 medium tomato, red
- 1/2 cup cottage cheese
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper, ground
- Hard-boil eggs, allow to cool, then slice in half. Slice tomato.
- Top each egg half with a tomato slice and then a dollop of cottage cheese.
- Sprinkle with salt and pepper to taste.
