Delicious Kids Salad


While we have so many sweet, raw apples, I would love to include them in as many salads as possible.  While some kids like traditional salads, my poor kids have my sweet tooth. Anytime we can get our hands on a sweet salad, we will!  So, here is one of our all time favorite salads, and perfect for our new stash of apples.

  • 2 cups shredded cabbage (I buy bagged coleslaw for this)
  • 3 apples, seeded and chopped. any color
  • 2 tablespoons dried cranberries
  • 2 tablespoons sliced almonds


  • 1/2 cup light mayo (I used Light Best Foods)
  • 2 tablespoons sugar
  • 1/8 cup white vinegar
  • 1 TBL poppy seeds

Mix all ingredients together, store in fridge.

Super yummy! Lunch, dinner, or even snack time!

Wow, perfect timing! I was trying to figure out what to serve as a side dish with butternut squash soup for dinner tonight when I saw this post on my newsreader. We had everything on hand, so I went straight to the kitchen and made it. I did sub lemon juice for the vinegar. Three out of four people in my family loved it and I think that’s a pretty good success.

What a coincidence!! I just got a recipe for butternut squash soup from my neighbor last night (plus a squash!) So, I was thinking about making that tonight too!

I loved this salad. I used greek-yogurt instead of the mayo and omitted the vinegar and it was also very delicious. Thanks for posting such awesome ideas.

This is a really good slaw 🙂 I make it quite a bit, actually. Today I added cut up strawberries, as well, and it was *really* good! T’hanks for sharing!
