Blender Wheat Pancake Recipe with Kiwi and Bananas

We put whole wheat kernels (or whole wheat berries) in a blender to make these super fluffy pancakes!  That’s as 100% whole grain as you can get!

If there ever were a food shortage, you are all welcome to come to my house to get some wheat!  We bought over 300 lbs a few years back, and I think we’ll have enough for our family, plus the entire state of Utah!  I don’t have my own wheat grinder, but I can borrow my mother in law’s when I need to make some flour, otherwise, we use whole wheat for three other reasons.

  1. We soak it for cereal
  2. We make my favorite wheat berry salad.
  3. We use it for Blender Pancakes!

Wheat kernels can be very inexpensive to buy.  Instead of ground into flour, you can buy the entire kernel, like this:

Using the wheat to make pancakes in a blender is super easy, and the result is fluffy – amazing pancakes!

Step 1) Gather ingredients:

The ingredients: Wheat, Milk, Honey, Salt, Eggs, Baking Powder, and Oil

Step 2) Blend

Blend only 1 cup wheat kernels and 1 cup milk, on high, for several minutes, until batter is smooth

Add remaining ingredients and blend again, just for a few seconds, until all the ingredients are incorporated.

Step 3) Cook

I like to use a measuring cup, in order to make all the pancakes fairly similar in size, and I think the 1/4 cup is the perfect size!  Sometimes we like mini, and in those cases, I’ll use a tablespoon.

Once your pancakes begin to bubble on top, they are ready to flip!

Hands down, my kids who likes pancakes more than life itself, asks for them on every birthday, and makes them most weekends is my 14 year old, Nate.  He would eat pancakes for breakfast, lunch, and dinner!

I like pancakes because they are a great vehicle for any fruit that is in season!

So, we added kiwi and bananas to these pancakes, and they were perfect! No need for syrup!

Whole wheat kernels are perfect for your food storage! They last longer and retain their nutrients better than ground whole wheat flour! So, next time you are at the store, grab some wheat and give these pancakes a try.

Blender Wheat Pancake Recipe with Kiwi and Bananas
Serves: 4

Ingredients

  • 1 cup – milk
  • 1 cup – Wheat, hard white
  • 2 large – egg
  • 2 tablespoon – grapeseed oil
  • 2 teaspoon – baking powder
  • 2 tablespoon – honey
  • 1 1/2 teaspoon – salt

Directions

  1. Put milk and wheat in a blender. Blend on high for 4 minutes, or until batter is very smooth.
  2. Add and blend on low, eggs, oil, baking powder, honey and salt.
  3. Bake on a hot griddle by pouring out in 1/4 cup portions.

I’m so glad you shared this post! I have been wanting to buy wheat berries and do not yet have a flour mill. I am looking for an inexpensive hand crank to purchase, but I did not realize I could make things like pancakes with the blender. I would also use them for cerals and for sprouting, and will try out your favorite salad too. I think I will finally make my order now! Thank you!

I’ve tried whole wheat pancakes with whole wheat flour and they aren’t my cup of tea. Does blender pancakes taste like that or more like refined flour pancakes?

Wow! You have a stock of wheat that will last you a lifetime seems like it. 🙂 I usually buy the wheat pancake in a box but my kids don’t like them. Is this scratch recipe a whole lot better? What skillet do you use, that looks nice.

I live in a town that has a Wheat mill! Plus they have a little store front. So, it’s very easy and convenient for me to get wheat kernels. Also, if you have any stores that sell by bulk, I’ve seen wheat by the grains in big buckets. As a last resort, I don’t know where you live, but if there is a LDS Cannery near your house, they sell it pretty cheap. They have 25lb bags for only $11.25! And, I have actually seen wheat once in a while at our local Costco. If stored properly, it will last for 10-12 years!

Not really Kirti- I would just use a standard pancake recipe if you’d like to use flour.

Amy, I finally tried these after having them pinned for so long, and they were WONDERFUL!!!! They are the fluffiest whole wheat pancakes I’ve ever made. The kids LOVED them. I made them with frozen blueberries dropped into the pancakes while they were on the griddle.

So if you have a Vitamix, why don’t you grind wheat with it? I have a “dry” container that I grind all my wheat in. I actually got rid of my bulky wheat grinder when I got the Vitamix because it works just the same. I’ve been very pleased with it. There are a ton of different things that you can grind with the dry container. For someone like you, it’s a worthwhile investment (I swear I’m not trying to sound like a commercial – ha!).

Anyway, thanks for the recipe. I’ll be using this a LOT.

I can’t beleive I never tried to grind wheat in the vitamix!! I just spent several hundred dollars over Christmas to buy a wheat grinder! While I do love it, we don’t have much room in our house, so extra appliances are always in the way! should have tried that first!!

Has anyone tried these with kefir? Should I add more milk? Maybe just water? Have you tried spelt instead of wheat? Oh the possibilities!!! I think I will try with white wheat, coconut oil, and kefir tomorrow for brinner. 🙂

No reason you couldn’t try to just leave the eggs out altogether! I bet it would be just fine, but haven’t tried it.

There is an actual egg replacement product found in the health food section of most grocery stores made by Ener-G. I use it in all my baked goods.http://www.ener-g.com/egg-replacer.html

great posts…..I so want to try out your ideas soon. Just wondering if I can use a regular blender for this recipe. Will it grind the wheat kernels? I do make pancakes everyone loves with 2/3 parts whole wheat flour mixed with some white flour. But these seem fluffier n healthier, can’t wait to try them
