Watermelon Strawberry Smoothie

I always know that summer is approaching when I buy my first watermelon.   We almost always have a bowl of watermelon cut up in our fridge throughout the entire summer.  It is definitely one of the most refreshing foods on a hot day.

Watermelon is packed full of nutrients and phytochemicals, but there is one nutrition fact most people aren't aware of:  Watermelon has more lycopene than tomatoes!  According to the USDA, Watermelon has about 40% more lycopene than raw tomatoes which are known for their high lycopene levels.  Lycopene is a powerful antioxidant that has been shown to possibly help fight heart disease and prevent several types of cancer.

In addition to lycopene, Watermelon's other health benefits include:

  • Fat free and low calorie
  • High in Vitamins A( help maintain eyesight, is also an antioxidant) Vitamin C (helps strengthen immunity, heal wounds, prevent cell damage, promote healthy teeth and gums)  and Vitamin B6 (helps brain function and helps convert protein to energy).
  • Good source of potassium
  • Contains 92% water by weight - good for hydration!

 

As much as we love watermelon, sometimes the pieces that are in the bottom of the bowl sitting in the juice, end up getting a little mushy.  So we decided instead of throwing them out, to make a pink smoothie.  Our smoothie had 2 ingredients:  Watermelon and Strawberries.

We blended them together and added a little ice.  No other liquid is needed because of the watermelon's high water content!  It was sweet, refreshing and definitely healthy.  So next time you get to the bottom of the watermelon bowl, whip up one of these nutrient packed super easy smoothies!

Just blend 1 cup of watermelon and 2 cups whole strawberries together. If you want it colder or thicker, then add 5 ice cubes. Enjoy!

What a great idea!! Wish I had thought of this when we came back from our beach trip recently and had mushy watermelon at the bottom of our bowl. Thanks!!
