Buckwheat Multi Grain Waffles
B is for buckwheat today! Technically a grass or fruit seed, buckwheat is generally classified as a grain, due to the way you prepare buckwheat (like rice or oats). Buckwheat can also be ground into a flour, which is delicious addition to waffles! This adorable circus waffle iron was loaned to me by my neighbor and friend, Holly. My kids LOVE it. THANKS HOLLY. We'll return it ASAP!
Buckwheat Multi Grain Waffle Recipe
- 1 cup whole wheat flour
- 1/2 cup buckwheat flour
- 1/2 cup oats
- 1 TBL baking powder
Mix dry ingredient together. In a separate bowl combine:
- 1 1/2 cup low fat milk
- 1 egg
- 1 TBL honey
- 1 TBL canola oil
Add the wet ingredients to the dry. Cook on a waffle iron.
Are there any benefits to including Buckwheat in a healthy diet? Yes! Buckwheat has been shown to lower cholesterol and blood pressure, as well as control blood sugar. It's a good source of flavonoids and magnesium.
Buying tip: I couldn't find buckwheat flour at my grocery store. I did finally find it at the health food store in the bulk bins. It was only $1.29 per pound! Great price!
