Breakfast Pizza Pancakes!

Generally on the first Monday of the year, I dread going to the gym, because it's usually packed!  I felt like I was in the twilight zone this morning though. There were actually LESS people at the gym than usual.  Is it still the holiday? I know we don't get mail today, but what's the deal?  Did anyone set New Years Resolutions?  Anyway, it was nice to not have to wait for my favorite cardio machine, the Stairway to nowhere machine.  ha ha

So, this morning is officially the last day of vacation for my kids.  I announced we were having PIZZA for breakfast!  As you can imagine, they were pretty excited.  In fact, they were actually more excited when they found out it was really pancakes for breakfast, but eaten with their fingers, like a pizza! breakfast pancake pizza

Here is what we did:

  • Made one big pancake- as big as would fit in our griddle.
  • Placed one cup of raspberries in a saucepan, crushed them with the back of a wooden spoon, and stirred until they were broken down into a chunky sauce.
  • Spread the berry sauce over the big pancake.
  • Sprinkled with coconut (to look like the cheese)

Super easy, and super yummy!

The toppings here could be endless. We thought of:

  • Bananas
  • Apples
  • Peaches
  • Berries
  • Pineapple
  • Crushed nuts
  • seeds
  • Granola

Oh, I love this! You can make it fun for holidays! Heart shaped, red white and blue ( berries and bananas), etc. I just signed up for your meal plan and I am so excited about it! Great idea! I always like your meals, so I know this will be great for us! HappyNew year!

I love this site, I am not a kid but a kid at heart my chidren are grown but we still like fun, healthy, delicious food! Is there nutritional information for these recipes somewhere and I am missing it?

Ha ha.. thanks Julie.. Yes, we are all kids at heart. The only recipes we've analyzed are for the meal planning site (http://myhealthymealplans.com) We aren't doing this just to have people join the site, but we only analyze those recipes because it's so dang time consuming. Several hours a week are spent just entering ingredients. Grrrrr. If we happen to analyze a recipe that is on both sites however, we'll see if we can add the nutrition data to both pages for sure!

My daughter loves these! Would have never thought to put all this together, but it was a lovely surprise and has officially ruined plain 'ol pancakes with honey for us!

Would be healthier if the base was eggs instead of grains. The protein would keep them feeling full longer.
