Bran Blueberry Muffins
I bought some bran cereal the other day that has 70 calories and 13 grams of fiber! That's 50% of the adult recommendation for fiber! So, for these muffins, I followed the recipe on the cereal box for Lemon Cake, but changed the recipe to make it Blueberry muffins. The result was delicious, and perfect for B week!
Bran Blueberry Muffin Recipe
- 1 cup flour
- 1/4 cup sugar
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
Mix all dry ingredients together. Then in a separate bowl, combine:
- 1 cup bran cereal
- 1/4 cup fat free milk
- 2 egg whites
- 3 TBL. Canola oil
- 1 cup blueberry yogurt (I used Chobani blueberry Greek yogurt) Or use 1 cup plain yogurt with 1/4 cup of fresh blueberries.
Let bran cereal soak in wet ingredients for 5 minutes. Then add wet ingredients to dry. Scoop batter into prepared muffin pan. Bake at 350° for 12-15 minutes, or until muffins are cooked through.
