Bran Blueberry Muffins

bran blueberry muffinsI bought some bran cereal the other day that has 70 calories and 13 grams of fiber!  That's 50% of the adult recommendation for fiber!  So, for these muffins, I followed the recipe on the cereal box for Lemon Cake, but changed the recipe to make it Blueberry muffins.  The result was delicious, and perfect for B week!

Bran Blueberry Muffin Recipe

  • 1 cup flour
  • 1/4 cup sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt

Mix all dry ingredients together.  Then in a separate bowl, combine:

  • 1 cup bran cereal
  • 1/4 cup fat free milk
  • 2 egg whites
  • 3 TBL. Canola oil
  • 1 cup blueberry yogurt (I used Chobani blueberry Greek yogurt)  Or use 1 cup plain yogurt with 1/4 cup of fresh blueberries.

Let bran cereal soak in wet ingredients for 5 minutes. Then add wet ingredients to dry.  Scoop batter into prepared muffin pan. Bake at 350° for 12-15 minutes, or until muffins are cooked through.

My 13 month old daughter loves these!!! She tends to like lots of carbs so I try to get fruits and veggies in other ways. I used vanilla whole milk yogurt and 1/3 C defrosted frozen blueberries and they are really good!! Very sweet but it's the natural sugar in the organic yogurt!!

I only had vanilla yogurt so I reduced the sugar to 2 tablespoons. I also put in 1/2 C blueberries because I love them! The muffins were tasty.

I used the bran found by in the cereal aisle! Like the cereal "All-Bran", and I don't crush it or anything. I just use it whole. It's great in so many recipes!
