  • 1 3/4 cup flour, all-purpose
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon pumpkin pie spice
  • 1/4 cup coconut oil
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 1/2 teaspoon vanilla extract
  • 3/4 cup pumpkin, canned
  • 1/2 cup milk

Serve With

  • 6 medium kiwi

  • Preheat oven to 350°F.  Spray mini muffin pan with cooking spray.
  • Mix flour, baking powder, salt, cinnamon, nutmeg, and pie spice together in a medium sized bowl, and set aside.  In a separate bowl, mix the remaining ingredients.
  • Gradually add dry ingredients to the wet. Mix just until combined, taking care not to over-mix.
  • Pour an even amount of batter into each muffin cup.  Bake for 11-15 minutes. Check at 11 minutes by inserting a toothpick into the center of a muffin.  If it comes out clean the muffins are done baking; if not, continue baking until done.
  • Serve warm with kiwi slices.
