- Preheat oven to 400°F.
- Drain and rinse chickpeas, then dry with a towel.
- Spread chickpeas out onto a cookie sheet lined with foil; drizzle with oil, and sprinkle with Parmesan and salt.
- Roast for 25-30 minutes.
- Allow to cool for 5 minutes before serving.
