Roasted Parmesan Chickpeas (or Soy Nuts)

  • 15 ounce chickpeas (garbanzo beans), canned
  • 1 tablespoon olive oil
  • 1/2 ounce Parmesan cheese, shredded
  • 1/8 teaspoon salt


  • Preheat oven to 400°F.
  • Drain and rinse chickpeas, then dry with a towel.
  • Spread chickpeas out onto a cookie sheet lined with foil; drizzle with oil, and sprinkle with Parmesan and salt.
  • Roast for 25-30 minutes.
  • Allow to cool for 5 minutes before serving.
