Wheat free Pancakes with a kick of protein!


I’ve seen a few recipes for cottage cheese pancakes.  One particularly fabulous one I got out of Tosca Reno’s first cookbook, and then I had to return it to the library, and never copied it down!  I have a hold request to get it back, but I don’t have it yet.

In the meantime,  Stacey (a blog reader) sent us this recipe for Cottage cheese pancakes.   My kids really really love them! I could eat them every day!

I changed the recipe slightly.  The batter is really runny… but don’t let that scare you. They still turn out fine!

  • 1/2 cup oats (make sure they say “gluten free” if you have an allergy to gluten)
  • 1/2 cup cottage cheese
  • 2 eggs (Or 4 egg whites..which is what I  used)
  • 1 tsp vanilla
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 TBL Oil

Blend ingredients in a blender.  Don’t over blend though.  Today’s looked much more appetizing.

We like to top our pancakes with yogurt (yes, we top lots of things with yogurt) and fruit.  What do you like on top of your pancakes?

I usually just put fruit on top of my pancakes. I do like real maple syrup on occasion but no one else in my house does, they like that gross corn syrup stuff. I have never heard of cottage cheese pancakes. I’ll have to try these.

Hi Health Coach, I think because you are blending it up, it would come out pretty close to the same. Let us know if you try it!

These are amazing! I’ve always hated cottage cheese and almost backed out when I was measuring this out, but they turned out SO delicious!!! Can’t wait to make them again. Btw – I used rolled oats.

I used cottage cheese with pineapple (bought by accident!) and these were amazing! I’ve tried several modifications of this recipe, but keep returning to the original- it’s the best!

I like cottage cheese and fruit on my pancakes so I’m sure I’ll like these with it in them! We are gluten free so this will be our next breakfast.

Either chopped strawberries or (when I am going all out) a shmear of peanut butter, sliced banana, and a dollup of greek yogurt with a drizzle of pure maple syrup over it all.

Just made these and my kids and I enjoyed them very much. A few notes:
1. Nutmeg is a strong flavor and I think this amount was a bit overpowering. Next time I will cut the amount in half.
2. Don’t make these expecting them to have the texture of regular pancakes. They are rich a dense. I love that about them, but they wouldn’t satisfy a craving for a fluffy pancake IMO.
3. This made a very small amount. Perfect snack for 3 but I would definitely double it if making it for my family of 5.
4. These would be absolutely amazing topped with the Pumpkin Fluff recipe from 100 Days of Real Food. Next time I will make the two recipes and serve them as a healthy treat.

I often make these. We like ours savoury, I add some garlic powder and shredded cheese to the batter. They make a great replacement for toast with our eggs! I’ve tried many different cheeses, just depends what’s in the fridge. Sharp cheddar and/or feta are favourites.

I make cottage cheese pancakes all the time. They are wonderful , they keep all of our family pretty full all morning long. We use Daisy brand, it’s also great with dark chocolate chips for a weekend treat.
