Waffle Breakfast Sandwich

Ingredients

  • 8 large egg
  • 8 medium freezer waffles
  • 4 ounce cheddar cheese
  • 1 cup spinach
  • 1 medium tomato, red

Serve With

  • 4 medium apple

Instructions

  • Whisk together eggs.
  • Heat a skillet on medium high temperature.  Cook eggs until no longer runny, flipping over to cook both sides (like a giant omelet).
  • Toast waffles.
  • Cut egg into four equal pieces and place one piece onto each of the four waffles.
  • Layer each with cheese, spinach, a slice of tomato, and top off with a second toasted waffle.
  • Serve with an apple too!
