Turkey Salad Roll

- 1 stalk celery
- 4 serving Turkey breast meat
- 1/2 cup mayonnaise, light
- 1/2 cup almonds, sliced
- 2 cup spinach
- 4 medium orange
- 4 medium rolls, hard
- Thinly slice celery, and dice turkey. Combine with mayonnaise (or plain yogurt can be used if desired) for sandwich filler. Place it in airtight containers for four, until ready to assemble. Or, serve immediately stuffed inside a whole wheat roll that has been layered with fresh spinach.
- Serve with orange slices and cherry tomatoes.
