Slow-cooker Ham and Bean Soup

Ingredients

  • 1 medium onion
  • 3 clove garlic
  • 2 medium carrot
  • 3 stalk celery
  • 1 medium bell pepper, red
  • 4 ounce ham
  • 1/4 cup parsley, fresh
  • 1 tablespoon basil, fresh
  • 1 teaspoon oregano, dried
  • 3 teaspoon thyme, fresh
  • 1 tsp bay leaf
  • 2 cup Seven-bean mix, dried
  • 4 cup chicken broth, low-sodium
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper, ground
  • 14 1/2 ounce crushed tomatoes, canned
  • 1/2 tablespoon lemon juice

Instructions

  • Prepare vegetables by chopping onion, garlic, carrots, celery and bell peppers. Also chop 4 ounces of ham and your fresh herbs. (If using dried herbs reduce amounts to 1/3 of the original.)
  • Add veggies and seasonings to slow cook.  Add beans.  Let cook for 6-8 hours on low or 4-5 hours on high or until beans are soft. Discard bay leaf. Stir in lemon juice.
