But, if your assignment is mashed potatoes, why not try adding some cauliflower to increase the nutrients a bit, while decreasing the carb load of the dish. 1 cup of cauliflower has 91% of your daily requirement for vitamin C!
Mashed Cauliflower Recipe
- 2 cups chopped cauliflower
- 2 cups chopped potatoes
- 1/8 cup milk
- Salt and pepper to taste
Boil cauliflower with potatoes in water for 20 minutes or until tender. Drain water and place in bowl. Mix thoroughly with beaters. Add milk, salt and pepper.
