- 1/2 pound beef, ground, 95% lean
- 1 teaspoon cumin, ground
- 1 teaspoon chili powder
- 3/4 teaspoon salt
- 1/2 teaspoon paprika
- 4 ounce cheddar cheese
- 1 cup cherry tomatoes
- 1 medium cucumber
- 4 ounce tortilla chips
- 2 cup grapes
- Add beef and seasonings to a non-stick skillet. Cook over medium high heat until no longer pink, stirring to crumble. Allow to cool before packing in a lunch. (It is best if prepared the night before.)
- Shred cheese, slice tomatoes in half, and cut cucumber into slices or sticks.
- Serve at home or pack into lunchboxes, keeping each ingredient separate to allow children to assemble lunch on their own.
