Flank Steak Fajitas

  • 1/2 lb beef flank steak, lean
  • 1 medium onion
  • 1/2 cup salsa
  • 1/8 cup cilantro
  • 2 tablespoon LIME JUICE
  • 2 clove garlic
  • 1/2 tablespoon chili powder
  • 1 teaspoon cumin, ground
  • 1/2 teaspoon salt
  • 1 medium bell pepper, red
  • 1 cup, pieces or slices mushrooms, white
  • 6 medium tortilla, whole wheat


  • 1/4 cup SOUR CREAM, LIGHT
  • 1/4 cup cheddar cheese, shredded


  • Trim any fat from steak and cut into strips. Sear, and place in slow cooker.
  • Chop onion, cilantro, and garlic; add to slow cooker along with salsa, lime juice, and seasonings.
  • Cover and cook on low for 5-6 hours.
  • Chop bell pepper and mushrooms. Add to slow cooker and cook for another hour.
  • Preheat oven to 250°F. Wrap tortillas in foil and bake until warmed through (or heat one at a time in a microwave if preferred). 
  • Wrap fajita mixture in warmed tortillas and garnish with desired toppings.
  • Serve with your favorite fruit on hand.
