- 1 medium carrot
- 1/4 medium onion
- 4 large egg
- 4 large egg white
- 1/4 cup milk
- 1 cup spinach
- 4 ounces Parmesan cheese
- 4 medium tortilla, whole wheat
- 4 medium banana
- Begin by grating the carrot (you should end up with approximately 1/2 cup) and chopping the onion; set aside. Next whisk the eggs and milk until fluffy.
- Spray skillet with cooking spray; heat skillet over medium heat. Add carrots and onions; sauté for 2-3 minutes, stirring occasionally. Add eggs to veggies; allow eggs to become firm and no longer runny. Remove from heat, toss in spinach and cheese, stir. Fill tortilla with eggs and serve with bananas.
