Dessert Dates! Delicious and Delightful!

So, I got increasingly frustrated, and decided to finally make my ‘Date Newton’s” with Puff Pastry.  They did however turn out super amazing!! Just ask these boys taking a break from their scooter riding:

So, this is what we ended up with:

Date Pinwheels Recipe

The filling:

  • 1 cup chopped dates (not the kind coated with oat flour, actual dates)
  • 1/2 cup orange juice
  • 1/4 tsp. cinnamon

Put orange juice in a pot to simmer.  Once juice is warmed up, add chopped dates and cinnamon.  When juice is all absorbed, remove from heat, and puree dates in a food processor.  I then added an extra tablespoon of orange juice to make it easier to puree.

Take puréed dates and spread between rolled cookie dough, or puff pastry.  Roll from short.  Slice rolled dough and place on baking sheet.  Bake at 400° for 15 minutes, or until dough begins to brown.

These are a perfect treat if you are the parent to bring preschool snacks!  If it’s D week, and you are snack mom, you do not have to buy donuts!  I promise, the kids will love these!

I also love these energy bars we made with dates.

And, I love Lara bars!  I just found some at Costco.  They ended up being almost $0.80 per bar though (way exceeding my 0.20 per snack limit). I guess the kids won’t be getting those. (smiley face)

This is my favorite, and I have another jar in my shower to use on my skin. It’s awesome! (I actually use this almost exclusively since it doesn’t leave an aftertaste.)

It is great as a spread on toast or on anything else you’d use butter. If I need oil for baking, I simply melt what I need and use it.

Our local Whole Foods carries this brand, but you can find it online too.

Love these! Their healthy and look delicious. I will definitely be using the puff pastry over the cookie dough, but I am sure it will still be delicious! 🙂
