Chicken Chili Verde

Ingredients

  • 1 pound chicken breast
  • 4 cup great northern beans, canned
  • 2 cup chicken broth, low-sodium
  • 8 tablespoon salsa verde
  • 2 1/2 cup corn, frozen
  • 1/2 cup cilantro

Salsa

  • 1 tablespoon lime juice
  • 2 stalk green onion
  • 3 medium tomato, red
  • 1/2 medium peppers, jalapeño

Serve With

  • 1 tablespoon sour cream

Instructions

  • Cook chicken and either shred or chop into small pieces.
  • Mix all ingredients except cilantro and Fresh Tomato Salsa in 3 quart saucepan.
  • Heat to boiling; reduce heat to low.
  • Cover and simmer 20 minutes.
  • Stir in cilantro.
  • Serve chili with Fresh Tomato Salsa and sour cream.
  • Zest and juice your lime.
  • Chop green onions and tomatoes.
  • Seed and finely chop your jalapeno pepper
  • Mix all ingredients together.
