This lightened up version of broccoli soup is perfect for B week, and even better on a cold winter day!

Broccoli Soup Recipe

  • 2 Tablespoons butter
  • 1/2 onion, chopped
  • 1 clove garlic, pressed or chopped.

Cook onion and garlic in the butter for 3-4 minutes. Then add

  • 2 TBL flour

Mix flour into butter and veggies until a rue begins to form.  Then add:

  • 1/4 tsp. pepper
  • 1/4 tsp. thyme
  • 2 or 2 1/2 cups milk (added very slowly, stirring until thickened each time.)
  • Salt (to taste)
  • 4 cups chopped broccoli.

Add broccoli and simmer the soup for 10 minutes, or until broccoli is tender.

We topped our soup with homemade croutons!  This time we sprinkled Thyme on the bread and it went so well with the flavors in the broccoli soup!

Made this tonight for dinner – I have a DH and 4 small children – definitely needed to double+ the recipe – we each only got a tiny bowl. Everyone was asking for seconds…

I didn’t have broccoli so I used carrots and celery and it tasted great thanks for the idea. And for the serving size I doubled it for my family and my growing belly lol. Thank you again. 🙂

I am making this right now. This is my second time making this and it was a hot the first time so easy dinner #2. For the rue, I added 1 to more of butter and added tsp of parsley, basil, chopped onion and the garlic
