Berry Coconut Steel Cut Oats

  • 2 cups water
  • 1 cup coconut milk
  • dash of salt
  • 1 tsp. vanilla extract (or almond extract sometimes)

Bring to a boil in a saucepan on the stove.  Then add:

  • 1 cup steel cut oats

Return to a boil, reduce heat and simmer for about 10  minutes, and then add:

  • 1 cup mixed frozen berries

Bring the heat up slightly until it’s boiling again, and reduce heat, Cover, and simmer again and cook for 10 more minutes.  Makes 4 servings.  This can be put in the fridge and portioned out for several mornings in a row- which is what I do!

You can of course do this with rolled oats, or even quick oats in the microwave.  The dietitian for Quaker, Dave Grotto, said gram for gram the nutrients are the same.  The difference is, When you eat steel cut oats or oat groats as opposed to rolled or quick, they can be:

  • More satiating (you’ll be full quicker, and stay full longer)
  • Will not be absorbed as quickly as rolled oats or quick oats (less impact on insulin)

Below is instant oats, and steel cut oats.  Both came from an oat groat, but the steel cut oats have been chopped in half, while the rolled oats have been steamed and sent through a roller.

The Wyman’s frozen berries I used in this oatmeal was provided to me by Kid Kritics, and they were AMAZING!!  The package said the berries were from Maine.  They were super sweet (without any sugar in them of course), and perfectly ripe!

we eat uncooked rolled oats and/or ezekial sprouted grain cereal each morning mixed in with banana, raisins, and almonds or cashews. we just pour almond or oat milk over it. the kids prefer the vanilla flavors. when berries are in season, we’ll add these. if you actually make it ahead of time and let it sit in the fridge a few hours (or overnight), the liquid soaks into the oats making it “mushy” so it feel cooked but you save all the nutritional value. i definitely want to try this with coconut milk and think we’ll try steel cut and whole oat groats as alternatives. thank you.

We eat a bit of it all- except the instant. I have a yummy recipe that uses the steel cut oats but it is more like a casserole and takes some more time. I have been looking for another recipe to use my steel cut oats and I think this just may be it. We too will probably soak the oats overnight since it tends to give some belly aches and the soaking relieves that. Thank you!!

Steel cut oats also taste SO much better than instant! This recipes looks divine! Which coconut milk brand do you prefer and where do you buy from?

Nisha- I’m not picky with coconut milk. Probably should be. I just buy whatever is on sale.

We eat rolled oats for breakfast once a week. Two of my four kids will eat them. I hadn’t thought to put in a little vanilla or using coconut milk. Do you find coconut milk in a can or by the cow’s milk?

Not really. Just a taste preference. We have no dairy allergies here.
Plus I like that it is shelf stable. Even if I’m out of milk, I can go to my food storage and get some coconut milk.

I gave this to my daughter today with a tablespoon of cashews and 1/2 a cup of milk would you say this is a healthy breakfast with good proportions..or would she have been better off with just the oatmeal?

I think that sounds like a fabulously healthy breakfast! Adding the cashews and milk would make it more filling and higher in nutrients for sure!

I just found this site a day ago and am enjoying reading your posts and recipes. I saw “Steel Cut Oats” under gluten free, but I thought you should know that oats aren’t gluten free. There are supposedly gluten free oats on the market, but for someone who has Celiac Disease, as one of my sons and I do, we cannot eat oats and even the certified”gf” oats are controversial among health care providers. I always remember B.R.O.W. – Barley, Rye, Oats, and Wheat are related grains that all have gluten in them.

I have a lot of regular oats, I will get some steel cut when I run out as I have been on the lookout for more filling foods, especially for my husband. It is hard to find foods that make him feel full. This looks delicious, pinned!

Wicked! I was looking for a ‘new’ porridge recipe as it’s getting cold here in the UK & a porridge & a bit of honey was getting a tad boring….this looks great I & love vanilla!!

Do you use regular (full fat) coconut milk or the light?
I love your recipes. I am making this one for my lunch tomorrow. I love oatmeal/steel cut oats jazzed up for lunches, I make them “Overnight Refrigerated oatmeal”.

I use light, but I’m not opposed to full fat. It’s just that I look at calories for myself, and try to consume less of them.
And I LOVE the overnight oats like crazy 😉
