Power Up Breakfast Bar
Ingredients
- 1/2 cup, chopped walnuts
- 1/8 cup wheat germ
- 1/8 cup flaxseed, ground
- 6 each dates, Medjool
- 1/2 cup water
- 1 cup peanut butter, all-natural
- 1/2 cup coconut oil
- 1/2 cup honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 2 cup oats, dry
- 1/8 cup wheat bran
- 1/4 cup sesame seeds
- 1/4 cup sunflower seeds
- 1/2 cup cranberries, dried
Instructions
- Preheat oven to 375°F.
- Add walnuts, wheat germ, and flaxseed to a baking sheet and toast in the oven for 4 minutes; set aside.
- Add dates to a medium-sized sauce pan with water. Cook over medium until dates are softened and most of the water has been absorbed.
- Reduce heat to low. Add peanut butter, coconut oil, honey, vanilla, and cinnamon; stir to combine.
- Add all remaining ingredients and toasted nut mixture to dates; stir well to coat evenly.
- Remove from heat and press mixture into an 8X8 inch baking dish. Place in the refrigerator for at least 30 minutes, until firm enough to cut into bars. Refrigerate leftovers.
