When I’m looking for recipes that even the pickiest eater will eat, I turn to my sister in law! With 5 kids from 2-12, she’s made a lot of meals that are both rejected and accepted. Once she finds one that her kids like, she makes it again and again of course! This bean toast is one of those meals.

Easy Cheesy Beans on Toast
She tried a recipe from Food Network Magazine and made a couple of alterations. Her kids LOVE this dinner idea, and she spends a total of 15 minutes in the kitchen. This is a great meal option because it uses few ingredients, can be adapted to your family’s tastes, and it is so delicious! You might think that using a strongly flavored cheese like Parmesan is risky, but a little bit goes a long way and it adds a great punch of flavor.
Whenever her kids see that she is making this for dinner, they get so excited. They never have leftovers. Try it!
Step 1) Broil the tomatoes- cut tomatoes into 1/2 inch slices and arrange on a parchment lined baking sheet. Sprinkle with salt and pepper. Broil for 5 minutes, or until tomatoes start to wilt and brown.

Step 2) combine pinto beans with barbecue sauce in a bowl. Arrange slices of whole wheat bread, or a whole wheat baguette, and pile with beans.

Step 3: Arrange broiled sliced tomatoes on top of beans.

Step 4: Sprinkle with chopped green onions.

Step 5: Sprinkle with Parmesan cheese

Step 6: Return pan to broiler for 5 more minutes, or until cheese starts to bubble and brown.

Step 7: Let your picky eaters gobble them down!

And then of course, I had to make some for our family as well.

So, when my sister in law Beth sent this recipe over, I actually made it same day because it sounded so delicious!

Easy Cheesy Bean Toast
Ingredients
- 3 medium tomato, red
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper, ground
- 2 cup pinto beans, canned
- 1/2 cup barbecue sauce
- 8 slice baguette
- 1 stalk green onion
- 1/2 cup Parmesan cheese, grated
Instructions
- Slice tomatoes ½ inch thick. Arrange on a parchment lined sheet pan and sprinkle with salt and pepper.
- Broil for 5 minutes, or until tomatoes start to wilt or brown.
- While tomatoes are broiling, mix cooked beans, barbecue sauce together in a bowl.
- Remove tomatoes from pan and set aside.
- Arrange slices of bread on pan, then top with beans.
- Then add tomato slices, then green onions, and then Parmesan.
- Broil on high for 3 minutes, or until cheese starts to bubble and brown.
