Healthy Banana Split Freezer Bites Recipe
This mini healthy banana split bites recipe makes a delicious frozen treat for kids.
This Friday is the 6th grade class party that I am coordinating with my son’s teacher. Every time I have to do the party, I’m always trying to think of something fun, delicious, and still have healthy options. For the Christmas party, we chose a chocolate fountain. We did have some junk food (cookies, marshmallows, etc.), but we also had fruit to dip. In the 6th grade, I feel strongly it’s about options, and you can have healthy options at every party.
Last week, as I thought about the party, I came across this post, Healthy Valentines Day Parties, and immediately knew I wanted to have a banana split bar! It’s perfect for my son’s class. I sent a note home to have parents contribute a variety of toppings, including strawberries, raspberries, bananas, nuts (we aren’t nut free), seeds, coconut, etc! I also have parents bringing ice cream. Anyway, the kids are excited, and I’m glad we can have a nice balance of healthy and indulgent!
Fast forward to the weekend as I was imagining all the toppings for our banana split party, and wanted to start eating some right away (that’s the trouble with being a food blogger, I look at a lot of food pics, and suddenly, I cant’ think of anything else but to turn it into a reality! haha) As opposed to a class party, if I’m making something for home, I substitute even more healthy food. Instead of ice cream, we’ll use yogurt. Instead of “strawberry sauce”, we’d mash up real strawberries.
Then to make our “at home banana splits” in perfect portions, we used cupcake liners and froze the whole thing!
Our concoction layered like this, but of course, feel free to get creative. We used paper straws and silicone muffin liners because they peel away from your finished product perfectly!
- Scoop of strawberry yogurt
- Slices of bananas
- Scoop of mashed strawberries
- Slices of strawberries.
- Scoop of vanilla yogurt.
- More sliced bananas and strawberries
- Melted chocolate
- Walnuts
- coconut
Then stick in the freezer!
Letting the kids participate, we had all the ingredients available to them. The filled their own individual cups and then we stuck it in the freezer, for about 2 hours.
After 2 hours, they were the perfect texture to take a bite out of it (not too solid, and not too mushy). If you freeze longer, leave them out on the counter or in the fridge until they are “biteable”
We drizzled melted chocolate over the top for the perfect dessert.
We also made mini ones!! They turned out great! One small slice of banana, dipped in chocolate on the bottom, or yogurt, then layered with a strawberry or strawberry sauce.
And they froze up beautifully!
Healthy Banana Split Bites
Ingredients
- 1 cup yogurt, plain
- 1 cup yogurt, fruit variety, nonfat
- 2 medium banana
- 2 cup, whole strawberries
- 1/2 cup, chopped walnuts
- 1 cup large chips chocolate chips, semisweet
- 1/4 cup coconut flakes
- 12 standard cupcake liners
Instructions
- In the bottom of a cupcake liner, scoop flavored yogurt (mash strawberries into plain if you want.)
- Top yogurt with slices of bananas. mash some strawberries, for strawberry sauce. Scoop strawberry sauce on top of bananas.
- Top sauce with slices of strawberries. Add one scoop of vanilla yogurt.
- Add more sliced bananas and strawberries.
- Melt some chocolate chips and drizzle over the top.
- Sprinkel with walnuts and coconut. Place in freezer for 2 hours.

I LOVE this idea! I love any time food is served as a “serve yourself” at parties. That way everyone gets exactly what they like! I just made some triple berry puree today – I think I’ll have to add that to some yogurt and bananas for an afternoon treat! Thanks for the idea!
