Let your kids wake up to some sweet and salty sweet potato hash browns on Halloween! Fun and easy way to start the festivities!
We love hash browns in our house. We love hash browns from russet potatoes, but also- we love the sweet taste of sweet potato hash browns. We’ve been making them for years. So, when I saw our pile of orange sweet potatoes and was thinking of Halloween at the same time, shaping them into pumpkins was a natural step.
If you were wondering how to make hash browns, I’ve got the steps for you. There are a few things that help us to make them perfectly!
Step 1) Peel the potatoes
This is the kids job! From when the kids were super young, they were taught how to peel potatoes. Our best advice here, is to hold the potato with your non-dominant hand. With your dominant hand hold the peeler, and then scrape the potato away from you. We have them do this over a bowl or paper towel to collect the peels. We use 2 very large potatoes, or 3 medium ones.
Step 2) Grate and Soak in cold water
Using a food processor makes this step fast and easy, but if you are only making a few hashbrowns, you can also use a standard cheese grater. Then, soak your grated potatoes in cold water. Soaking, according to several online sources, removes some of the excess starch so you can have crispier hash browns.
Step 3) Drain and blot dry
Another perfect job for the kids! Using a paper towel, dry your potatoes from excess moisture.
Step 4) Combine ingredients
Our typical- go to recipe includes, 4 cups shredded potatoes, 2 tablespoons of oil, a pinch of salt, and 2 eggs, whisked together.
Step 5) Fry it up
In a frying pan with enough oil or cooking spray to not stick, scoop 1/3 a cup of potato mixture and spread out with the back of a spoon or spatula to get the shape of a pumpkin. Too thin, and it might fall apart easily, but too thick, and it takes a long time to cook through. Experiment until you have the perfect width.
Step 5) Add Jack-O-Lantern Features
Cut a yellow bell pepper to decorate one side of your hashbrown, while it’s in the pan.
And that’s it! We love this breakfast with hard boiled eggs and fruit!
To make the little apple mouth, we used two slices of apple. Filled the center with peanut butter. Then, added cashews for the teeth.
