Fiesta Black Bean Dip and Veggies
High Protein Black Bean Dip
Servings: 4 servings

Ingredients
- 2 15 ounce cans black beans
- 2/3 cup plain Greek yogurt
- 2 medium limes juiced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon sea salt
- 1/2 teaspoon dried cilantro or 1 tablespoon fresh
- 1 1/2 cups cheddar cheese shredded**
Instructions
- Preheat oven to 400℉. Spray an 8×8 baking pan with cooking spray.
- Drain beans then rinse in a strainer.
- Add beans, Greek yogurt, lime juice, and spices to a food processor or blender.
- Process until smooth, then taste and adjust seasonings as desired.
- Stir in 1/2 cup cheddar cheese. Spoon into your baking dish and sprinkle with remaining cheese.
- Bake for 15 minutes or until the cheese is bubbling on top. Serve with tortilla chips, and carrot and celery sticks. Enjoy!
Notes
**I highly recommend buying a block of cheese and shredding it yourself. It will melt much better and give you a better texture and flavor than the pre-shredded cheese.
