- 3 cup salsa
- 1 fruit (2″ dia) lime
- 1 cup cilantro
- 1 tbsp (1 serving) taco seasoning
- 4 breast chicken breast
- 1 cup brown rice, raw
- 2 cup pineapple
- 1 medium avocado
- Add salsa, the juice of the lime, cilantro, seasoning and chicken breast to a crockpot; mix together, cover crockpot and cook on low for 4 hours. (Be sure your chicken has been fully defrosted).
- Just before serving, cook rice as directed on package; shred chicken and top rice with chicken. Serve with a side of diced pineapples and sliced avocado.
