  • 1 medium avocado
  • 1/2 cup cherry tomatoes
  • 1/4 medium onion, red
  • 4 none tortilla, whole wheat

Serve With

  • 1/2 cup salsa


  • Preheat a non-stick skillet over medium heat.
  • Mash avocado; dice tomatoes and onion and add to avocado. Mix well.
  • Place an even amount of avocado mixture onto two tortillas; top each with second tortilla.  Place each into hot skillet and cook each side until golden.
  • Cut each into 4 triangles; serve with salsa.
