Wheat free Pancakes with a kick of protein!
I've seen a few recipes for cottage cheese pancakes. One particularly fabulous one I got out of Tosca Reno's first cookbook, and then I had to return it to the library, and never copied it down! I have a hold request to get it back, but I don't have it yet.
In the meantime, Stacey (a blog reader) sent us this recipe for Cottage cheese pancakes. My kids really really love them! I could eat them every day!
I changed the recipe slightly. The batter is really runny... but don't let that scare you. They still turn out fine!
- 1/2 cup oats (make sure they say "gluten free" if you have an allergy to gluten)
- 1/2 cup cottage cheese
- 2 eggs (Or 4 egg whites..which is what I used)
- 1 tsp vanilla
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1 TBL Oil
Blend ingredients in a blender. Don't over blend though. Today's looked much more appetizing.
