Wheat free Pancakes with a kick of protein!
I've seen a few recipes for cottage cheese pancakes. One particularly fabulous one I got out of Tosca Reno's first cookbook, and then I had to return it to the library, and never copied it down! I have a hold request to get it back, but I don't have it yet.
In the meantime, Stacey sent us this recipe for Cottage cheese pancakes. My kids really really love them! I could eat them every day! The first day my kids decided to squirt a little food coloring in the batter. They turned out fine, but I thought they looked kind of gross! But, whatever. If that helps them to try new things, why not?
- 1/2 cup oats
- 1/2 cup cottage cheese
- 2 eggs (Or 4 egg whites..which is what I used)
- 1 tsp vanilla
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1 TBL canola Oil
Blend ingredients in a blender. Don't over blend though. Today's looked much more appetizing.
We like to top our pancakes with yogurt (yes, we top lot's of things with yogurt) and fruit. What do you like on top of your pancakes?
