Hard Boiled Egg Boats

This yummy, little, high protein snack caused my little house guests to stand over me, waiting to eat them.  These kids (my niece and nephew that are visiting for a few days) apparently love both hard boiled eggs, and cheese!cheese sailboat

I've been a big fan of kids eating eggs for a long time. Eggs are an inexpensive source of protein that also contains:

  • Choline: Vital for brain development
  • Lutein: Which protects eyes
  • Vitamin B12, which is important for energy
  • Naturally occurring Vitamin D- important for regulating calcium levels and enhancing absorption of calcium.

Keeping those little hands off this snack before I got a picture of them was almost impossible! But as soon as we were done, they dived in and got a great source of nutrients for their snack! (This could also be a quick breakfast too!)

Way too cute! A dairy free option could be to use a thick chunk of ham or Canadian bacon! I'm going to do this with my boys. Thanks for sharing.

I love your blog and your recipes. However, I have a small problem - please help :) My daughter, 20 months old, doesn't like to eat veggies. She only likes avocado, tomatoes and grapes. Sometimes bananas and clementines, If I am lucky she will eat blueberries. I really want her to eat more fruit and veggies,I tried everything (e.g., smoothies, soup, etc) but she just won't eat it. Do you have any tricks?I really want to make sure my daughter gets all the nutrients she needs... HELP! ;)

Valeria, I'm so sorry that you are frustrated, and I'm so glad that you want her to eat veggies! All of the tricks and strategies I've read and tried really haven't worked with my kids. I think I got the extra stubborn ones. However, they are older now, and always eat and actually like, their vegetables... the reason, I never gave up. It literally took YEARS for my kids to accept and like vegetables. I used to get frustrated because the experts would say, "It takes 8-10 tries for a child to accept a food," whereas my kids took 8-10 YEARS!! I know that is both frustrating and encouraging. Frustrating because you have many years ahead, but encouraging because if you offer veggies at every meal, they literally will decide, eventually, down the road... to eat them! Good luck!! Amy

@Valeria Kids look to their parents for what to eat so it's important for your daughter to see you eat fruits and veggies. And like Amy says keep offering them. Eventually she will eat it. Follow Ellen Satter's method of food responsibility. It's the parents responsibility of what and when to eat and it's the kids responsibility if and how much to eat. My youngest is 20 months also so I know what you are going through. I highly recommend raisehealthyeaters.com. She gives such practical advise. She has taught me so much! Of course I love Amy's website for nutritious snacks and meals.
