
I don’t mean turn your actual kids into potatoes, but rather fans OF potatoes, with red potato Fans! (Sometimes I think I’m so funny)
We roasted these red potatoes for letter-R week, with our roasted vegetables at dinner last night. It was actually my kids favorite part of the dinner, and mine! We used some olive oil, parmesan cheese, and some chives that have returned to our yard with a vengeance! I have no idea why these work so well for us. Planted once, and returns every year despite freezing conditions.
Red Potato Fans
Wash potatoes. Slice crosswise into thin slices, without cutting all the way through. Place the handle of a wooden spoon along the potato to stop your knife from cutting all the way through. Place sliced potatoes in a oven safe dish. Drizzle with olive oil, sprinkle with chives salt and cheese. Cover with foil. Cook at 350 for 45-55 minutes, or until potatoes are softened. Spread out potato to create your fans.
