Red Potato Fans
I don’t mean turn your actual kids into potatoes, but rather fans OF potatoes, with red potato Fans! (Sometimes I think I’m so funny)
We roasted these red potatoes for letter-R week, with our roasted vegetables at dinner last night. It was actually my kids favorite part of the dinner, and mine! We used some olive oil, parmesan cheese, and some chives that have returned to our yard with a vengeance! I have no idea why these work so well for us. Planted once, and returns every year despite freezing conditions.
Red Potato Fans
Wash potatoes. Slice crosswise into thin slices, without cutting all the way through. Place the handle of a wooden spoon along the potato to stop your knife from cutting all the way through. Place sliced potatoes in a oven safe dish. Drizzle with olive oil, sprinkle with chives salt and cheese. Cover with foil. Cook at 350 for 45-55 minutes, or until potatoes are softened. Spread out potato to create your fans.

- 26% of the DV for Vitamin C
- 21% of the DV for Vitamin B6
- 18% copper
- 14% potassium
- 14% Manganese
- 12.5% Tryptophan

Amy I love love red skin potatoes and usually make them with onion soup mix and bake for about 45mts. or so. I”ve always wanted to try this version, will give it a try now that I see yours. My one daughter loves fries and potatoes are her favorite food so we make a lot of baked potatoes.
I’ve actually been wondering about the health value of potatoes. They’re considered a starch, right? I always want to count them as a vegetable. I would eat potatoes every day of my life, if I could. Thanks for the info!
Also, my kids love potatoes prepared lots of different ways. We do “fries” by dicing them into bite-sized pieces, lightly mixing them with extra virgin olive oil (you don’t need a lot – I learned that the hard way) and sprinkling seasoned salt and red pepper flakes on top. Super yummy. Way better than the frozen fries at the store too.
I love the tip about using a wooden spoon to stop the knife! My mom makes similar potatoes with rosemary instead of chives (she calls them accordion potatoes), but when I tried making them, I couldn’t control the knife from cutting all the way through & they got all messed up. Now I can’t wait to try again–thanks!!! 🙂
