- Grate zucchini, set aside.
- Add oats, milk, cinnamon, salt and nutmeg to a medium saucepan. Bring to a boil, then turn down the heat and allow to simmer 4-5 minutes.
- Stir in grated zucchini, chia seeds, raisins, and 1 tablespoon of brown sugar. Cook for 4-5 minutes longer. If it becomes too thick, add more liquid.
- Remove from heat; add more brown sugar (if desired), pecans, vanilla and butter; blend well and serve warm.
