Sweet Zucchini Oatmeal

  • 1 1/2 medium zucchini
  • 1 1/3 cup oats, dry
  • 2 cup milk
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 1 ounce chia seeds
  • 1/8 cup raisins, seedless
  • 1/4 cup brown sugar
  • 1/4 cup pecans, chopped
  • 2 teaspoon vanilla extract
  • 1 teaspoon butter, unsalted


  • Grate zucchini, set aside.
  • Add oats, milk, cinnamon, salt and nutmeg to a medium saucepan.  Bring to a boil, then turn down the heat and allow to simmer 4-5 minutes.
  • Stir in grated zucchini, chia seeds, raisins, and 1 tablespoon of brown sugar. Cook for 4-5 minutes longer. If it becomes too thick, add more liquid.
  • Remove from heat; add more brown sugar (if desired), pecans, vanilla and butter; blend well and serve warm.
