Zucchini Chocolate Chip Baked Oatmeal
This Zucchini Chocolate Chip Baked Oatmeal is a perfect way to use up your summer garden zucchini. Your kids will be begging you to make it over and over again!

- 3 cup oats, dry
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cup almond milk, unsweetened
- 1/4 cup maple syrup, pure
- 1 large egg
- 2 cup zucchini
- 1/2 cup chocolate chips, dark
Preheat your oven to 375 degrees.
Lightly grease a medium baking dish and set aside.
In a large bowl, mix together the first 6 ingredients.
Add 2 cups shredded zucchini and then stir in the chocolate chips.
Transfer the mixture to the baking dish and bake in the preheated oven for 20 minutes. Enjoy!
